BBQ sauce

Back in June wife and I were in the VA Beach area and stopped in Whitner's BBQ. I had a brisket and sausage sandwich and my wife had the burnt ends. Both were very good. We liked the sauce used on the burnt ends.

Sometime after we get a little past crab season, I'm going to work on making up a sauce recipe.

Any of you have a favorite sauce or sauce recipe?

We love Shoup’s barbecue sauce from Indiana. Also their seasonings are awesome on every meat we have tried them in including fish and shrimp.

We have moved to Illinois and haven’t found any stores here yet that stock Shoup’s products but in Indiana Kroger has them.

Thank you for the recommendation. Just ordered some on-line. Shipping is as much as the product, but I find that is true with a particular Italian spice blend I love for spaghetti sauce and soups. I'll post what I think of it when it arrives.

Oh and on Steve O's sweet baby rays question ...my opinion ... it is OK; a little thick to blend easily with meats so I've thinned with water when I've used it. One son in law hates it but has trouble explaining why. I find it a sugar heavy taste, not much spark in it .... hmmm ... maybe instead of thinning with water I should thin with apple cider or apple cider vinegar. I may try that if I get some again.

Due to some health concerns, I am on a very low sodium diet. Like 1500 mg/day low. Most of you would say you don't add salt to your food. But it ain't just the salt. A cup of milk has 150 mg. A bowl of cheerios has over 200. Every "store bought" sauce I used to enjoy is loaded with sodium. Just two Tbsp of Sweet Baby Rays Orignal (which I use to love) has 290 mg. The Honey flavor has 300 mg in two Tbsp. The Shoups has 310 in two Tbsp. And you guys know as well as I do, no one can eat just two Tbsp of anything BBQ! The good news is, I've found a recipe that comes pretty close to the flavor of Sweet Baby Rays, but only has 6mg sodium in 2 Tbsp. Heck, that is less than 50 mg in a cup! If you are on a low sodium diet, or just want to do your heart a favor, you might give this a shot.

Low Sodium BBQ Sauce

• 1 1/4 cups ketchup (use no salt added catsup as regular catsup has over 5000mg in 1 1/4 cup)
• 1 cup dark brown sugar loosely packed
• 1/4 cup molasses
• 1/4 cup pineapple juice
• 1/4 cup water
• 1 tsp Kitchen Bouquet Browning and Seasoning Sauce
• 2 Tbsp white vinegar
• 3 tsp ground mustard
• 2 tsp smoked paprika
• 1 tsp garlic powder
• ½-1 tsp cayenne pepper start low and add to taste
• 1 tsp pepper

• Combine the ingredients and bring to a soft boil for 2 minutes while stirring.
• Simmer for five minutes until all the sugar has dissolved.
• Serve immediately or cover and store in fridge.

I like the pineapple juice. That was one of the ingredients I was going to add when I try to concoct a batch. There is also a video on the Whitner's BBQ sauce that I will need to watch several times to see if I can capture the proportions. He also has pineapple juice, but he throws it together so fast and dumps gallons of stuff in at a time. It will take some work for me to capture proportions and scale it down to a size I'm willing to work with.

I know this is probably slightly different but when we go camping we simply let soak in Jack Daniels Teriyaki marinade for a day or two. I then cook it over an open fire in the camp ring. I always take a few larger pieces of applewood and add to campfire so there is a good coal base. The teriyaki flavor in JD sauce is fairly sweet but it is oh so good on chicken or steaks.

The Shoups BBQ sauce arrived today. First impression was it is tasty. Set it up next to Sweet Baby Ray's and took small tastes of each, a couple of times, with pauses to think about what I'm sensing. The Sweet Baby Rays taste more like light brown sugar, while the Shoups more like dark brown sugar for the base. Shoups has a little more hot pepper in it, but I would not say it is spicy. I seem to sense some cloves in the Shoups that I don't get with the Sweet Bay Rays; it is a nice flavor sense whether it is from cloves or not. It is thick, like most commercial BBQ sauces I've tried, and for most of my uses I would thin it just a little.

As a follow up ... had some pork country ribs today. Put some of the Shoups on them. Wife thought she got a hint of fruit in the taste then after a couple bites was thinking it had a bit of a kick to it (hot pepper spicy). She put some more on her second rib so it must not have been too spicy for her, but she noted the heat enough to make mention of it.

You are welcome. We have been using Shoups for probably 25 years or more. It is definitely our favorite!

Even though I don't have musch storage space right now, I will have to work on some sauce for burnt ends. Wife went on a road trip with her mother and our eldest daughter. She came home with a nice looking 14 pound brisket.

I looked at the Whitner's short video several times and it looks like his sauce is basically a variation of a fairly standard Carolina sauce. I think I've got all the ingredients ... so I'm going to give it a shot.

Did a major fridge and shelf clean up and found plenty of way past best use dates. Now with some room, I ordered some granny's to try it.

I also made up a batch of sauce from scrath to try with some burnt ends ... wife likes it but I think it is a little too vinegar strong. I need to get some more tomato paste and will try another batch either before or while the brisket is smoking ... which will probably be Wednesday.

I think it could also be made with orange juice instead of the apple cider.

Granny's BBQ sauce arrived. It is good. Consistency is where I like it, not as thick as most sauces. Just a touch on the sweet side, just a touch of heat and just a touch of tangy. I see it has orange marmalade in the ingredients but I am not sensing orange in the taste. When the 18 oz bottle I bought is gone, I will probably go to a bigger size on the next order.
